Ingredients:

  • Beans — 400 g;
  • Carrot — 1 pc;
  • Onion — 1 pc;
  • Celery stalks — 3 pcs;
  • Vegetable oil — 3 tbsp;
  • Tomato puree — 350 ml;
  • Garlic — 3 cloves;
  • Oregano — 1 tsp;
  • Bay leaf — 1 pc;
  • Salt — ½ tsp.

Preparation of Greek Soup:

1. In a pot, bring water to a boil with the beans, skim off the foam, and cook covered on low heat. Grate the carrot on a fine grater and finely chop the onion.

2. Mince the garlic cloves and chop the celery stalks. In a skillet, sauté the carrot, onion, garlic, and celery in vegetable oil for a couple of minutes.
