Ingredients for the dough:
- milk — 150 ml;
- sugar — 40 g;
- fresh yeast — 21 g;
- salt — ½ tsp;
- vanillin — a pinch;
- eggs — 3 pcs;
- butter — 180 g;
- flour — 570 g.
Ingredients for the filling:
- apples — 4 pcs;
- sugar — 1 tbsp;
- butter — 20 g.
Ingredients for the layer:
- butter — 60 g;
- sugar — 50 g;
- ground cinnamon — 1.5 tsp.
Ingredients for the glaze:
- mascarpone cheese — 80 g;
- powdered sugar — 50 g;
- vanillin — a pinch;
- liquid honey — 1 tbsp.
Preparation of Cinnamon Rolls:
1. In warm milk, pour in a tablespoon of sugar and the yeast, and mix. Next, add a few tablespoons of flour to the mixture, stir, and let it activate for 20 minutes.
2. Then, mix the starter and add the remaining sugar, vanillin, eggs, and ⅔ of the butter, stirring well. Gradually add the flour, kneading a soft and elastic dough.
3. Incorporate the butter into the dough on a working surface. Let the dough rise in a warm place under plastic wrap for 1.5 hours.
4.For the filling, chop the peeled apples into small cubes. Place the apples in a pan with melted butter and sugar, and caramelize them.
5. Separately mix sugar with cinnamon. Knead the dough and roll it out into a large sheet, spreading butter over it.
