Ingredients for beet kvass:

Beet — 1 piece.

Brine — 1.5–2 liters (for 1 liter of water: 2 tablespoons of salt and sugar each).

Rye bread — 1 slice.

Instructions for preparation:

Wash and peel the beet, then cut it into large pieces. Place the pieces into a 3-liter jar, filling it halfway or up to ¾ of the jar's capacity, depending on the desired strength of the kvass.

Pour warm brine over the beets, ensuring they are fully covered.

Cover the jar with a towel and leave it in a warm place to ferment for 7–10 days.

After fermentation, strain the kvass. It can now be consumed as a health drink or used in cooking, for example, to make beet jelly.
